Timoly

Last night I made a tomato/guacamole salad that my older brother named "Timoly". It was such a hit, I had to make it again today. I didn't make the conventional guacamole, instead omitted the coriander and added sweet green chili peppers.





Recipe:

4 Lebanese mountain tomatoes
4 ripe avocados
12 small green chili peppers
1 teaspoon Tabasco
1 small white onion
Fresh lemon juice
Olive oil
Sea salt
Black Pepper
Handful of fresh basil 

Method:

Wash and slice the tomatoes and assemble half on a serving plate. In a bowl mash the avocado's and add 8 sliced sweet chili's, chopped onion, Tabasco, lemon juice, sea salt and pepper. Spread the guacamole mixture on the first layer of tomatoes and place the remainder of the tomatoes seasoning with salt, pepper, more lemon juice, salt, pepper, garnish with basil and sweet chili's. Serve chilled.
