Beryooni

Esfahan is famous for its Beryooni. Lamb is stewed with onions, minced and cooked in small pan made only for beryoon. The stock is reduced and seasoned with saffron, cinnamon and salt and pepper. Bread is then ripped into small pieces and drenched in the flavored stock topped with kashk (whey) and fried mint. Perfection.
