The quintessential Iranian side dish aka "mast-o-kheyar".
In my house I am always responsible for making this refreshing, cool dip and over the years I have perfected it using low fat yogurt and labneh.
Recipe: Serves 4
225 grams of low fat labneh
3 containers of skimmed yogurt (I used Almarai)
2 tablespoons of powdered almond
4 cucumbers washed and diced finely with the skin on
2 tablespoons of dried mint
2 tablespoons fresh lemon juice
Small handful of dried rose petals to garnish
Sea salt
Freshly ground black pepper
Method:
Mix all the ingredients together and taste adding more lemon juice, salt and pepper to your liking. When you are about to serve sprinkle the rose petals for garnish.
