Fresh pomegranate vinaigrette

In Persian mythology Isfandiyar from the (Shahnameh) eats a pomegranate and becomes invincible. I made this simple vinaigrette years ago and makes me feel semi invincible whenever I make it. The color itself is on another level, fuchsia pink.......mythology fuchsia pink!

I eyeball every ingredient for this recipe.

Ingredients:

Fresh pomegranate juice 
1 teaspoon Dijon mustard
Fresh lemon juice
Olive oil
Sea salt
Freshly ground black pepper 

Method:

Mix all the mustard, pomegranate, lemon juices and season with salt and pepper, slowly drizzle the olive oil and whisk with a fork to get an almost thick consistency. If the dressing is a tad too sour for your taste add a teaspoon of maple syrup.
