Sour Cherry Muffins

As I had brought back waaaaaaaaaaaay too many fruits from Iran, I decided to make sour cherry muffins last night. I baked them in mini muffins tins and they came out really moist from the almond powder I used packed with a sour punch. Perfect for breakfast or afternoon treat with tea. As sour cherries are not available in Kuwait, cherries will do just fine.

    Recipe:

    • 90 gr. of melted unsalted butter
    • 2 1/2 cups of self raising flour, sifted
    • 1/2 cup ground almonds
    • 3/4 cup castor sugar
    • 1 egg
    • 1 cup milk
    • 1/2 cup of fresh pitted sour cherries

Method:
    1. Place muffins paper in the tins and heat oven to 200 degrees Celsius 
    2. Combine butter, flour, almonds, sugar, egg and milk in a large bowl and stir until all ingredients are incorporated. 
    3. Half fill each hole in muffin tin and place two sour cherries or half cherry
    4. Top with remaining muffin mixture and place another sour cherry of cherry
    5. Bake for 25-30 min. Once baked remove and let cool.


P.S. Dark chocolate is another ingredient that will work really well!
