With the summer sun blazing we crave light, refreshing food that cool us down. One of my all time loves is Endive. Its bitter cold crisp leaves makes the perfect salad by itself or mixed with rocket, lettuce, watercress, the list is endless.
The Belgians love their endive so much they call it White Gold, I totally understand the connection. Highly nutritious and very low in sodium, this sexy momma is only calorie per leaf!
I whipped this very simple but delicious endive salad yesterday with a lemon thyme vinaigrette made up of freshly squeezed lemon juice, olive oil, a few sprigs of freshly chopped thyme, sea salt and black pepper.
