Grilled Cheese Sandwich

Is there anything better than a gooey, crispy melted cheese sandwich? I make these sins from time to time and experiment with different types of cheese, bread and sidekicks. This version is with Cantal cheese, caramelized shallots tossed in bay leaf and good quality toast. All purchased at Dean and Deluca.

    







Recipe:

White Toast
Cantal cheese (ask for it to be sliced)
2 tablespoons of butter
1 bay leaf
3 shallots sliced
3 tablespoons of olive oil
Salt
Pepper


Method:

Gently fry your shallots with olive oil and bay leaf for 15 minutes until golden brown season with salt and pepper. Heat a frying pan on low heat and add the butter, as soon as it melts put the slices of toast for 2 minutes and on one slice add the cheese slices and top with the shallots, add the other slice and leave for a good 4-5 minutes until one side is golden brown and flip to brown the other side. Once both sides are the shade of golden heaven remove and serve immediately. No utensils allowed!!!
